Our Batter, Our Soul
At The Batter House, everything begins with the batter and with memories.
We remember the old times, when our grandmothers would soak rice and pulses the night before, gently washing them again and again, guided by her hands and her watchful, caring eyes. Between quiet stories and soft laughter, she taught us patience – showing us how every grain mattered.
The next morning, the soaked grains would be slowly ground on the silvata, in an unhurried, loving rhythm. That slow process wasn’t just about making batter; it was about care, detail, and intention. Food made this way was lighter, healthier, and filled with something no shortcut could ever replace – love.
At The Batter House, we follow that very same philosophy. Our batters are purely homemade, prepared using traditional, slow-processing and natural fermentation methods, with no chemicals, no artificial enhancers, and no shortcuts. Using authentic, organic batter-making techniques, we allow time to do its quiet magic – just as it always has. In traditional days Amboli batter was kept with coal fire and that results in very slight flavour of coal in Amboli and same traditional way of fermentation is used by us to give customer a age old original grandma style Amboli.
Because when we slow down and do things the right way, we don’t just preserve flavour – we preserve memories.
And if you close your eyes while enjoying our dosas, ambolis, or ghavne, you might just hear the familiar sound of our grandmothers’ giggles and laughter, echoing gently through every bite.
